Legumes soups are not only healthy, but they also serve as an excellent source of nutrients. In particular, they are rich in protein and fiber, making them highly beneficial for a balanced diet. For example, lentil soup is among the most popular legume soups. In addition to this, smoked and boiled soups become even more flavorful when combined with groats. Moreover, hrstková and flake soups stand out for their unique mix of vegetables, spices, and oatmeal. Interestingly enough, oatmeal plays a crucial role in flake soup, forming its hearty base and eliminating the need for extra garnish.

    A classic dish, to begin with, lentil soup is a simple yet delicious dish, offering a combination of green lentils, bacon or sausage, onions, garlic, and broth. As a bonus, it is easy to prepare, making it perfect for any occasion.

    Ingredients

    • 100-200 grams of lentils
    • 100 grams of bacon or sausage
    • 100 grams of onions
    • 1.2 liters of beef stock
    • 2 cloves of garlic
    • lard
    • parsley
    • pepper and salt

    Preparation

    1. First and foremost, rinse the lentils and soak them in cold water for at least 2 hours. In the meantime, cut the bacon or sausage into small cubes. Afterwards, peel the onion and garlic and chop them finely.
    2. Next, melt the lard in a pot and fry the sausage until golden, stirring frequently. Before the sausage is completely browned, add the onions and cook until they turn translucent. Subsequently, add the garlic and sauté briefly to release its aroma.
    3. Once ready, add the lentils along with their soaking water and pour in the beef broth. At this point, let the soup cook over low heat for around 10 minutes. If the lentils are still hard, continue to cook until they soften completely. Lastly, season the soup with salt, pepper, and garnish it with fresh parsley.

    Our tip

    For a quicker process, soak the lentils overnight. By doing so, you can reduce the cooking time to just 10 minutes. Otherwise, soaking them for only 2 hours will result in a boiling time of 20–30 minutes.
