A journey of flavors and nutrition, beetroot, yeast, or plum jam – these different ingredients not only form the basis of various soups, but they also make them nutritious and flavorful. For instance, plum jam soup is an excellent choice if you are looking for something unique. Interestingly, its preparation is reminiscent of Old Czech music. In addition, beetroot, cabbage, and meat are the key elements of borscht, while cabbage and potatoes constitute the main ingredients of slush. YEAST SOUP
Easy and delicious, do you often have leftover yeast from baking? If so, you can transform it into a delicious soup! Indeed, all you need are simple ingredients, such as onion, yeast, broth, root vegetables, and jam.
Ingredients
- 40 grams of yeast
- 1 onion
- 3 tablespoons grated root vegetables (carrots, parsley, celery)
- salt
- cumin
- 1 tablespoon millet
- lard
- 1 liter of water
- chives
- fried bun – croutons
Preparation
- First, crumble the yeast into a bowl. Then, peel the onion and root vegetables. After that, finely chop the onion and grate the vegetables coarsely.
- Next, sauté the onion in lard until it starts to turn golden. At this point, add the yeast and stir until it begins to roast.
- Now, pour in hot water (cold water works too) and add salt, cumin, vegetables, and millet. Bring the mixture to a boil, then reduce the heat to one-third and cook for 12 minutes until the vegetables are tender.
- Meanwhile, cut older bread into 1 x 1 cm cubes and fry them in a dry pan over low heat until crispy. Finally, add sliced chives to the soup and serve with croutons.
Our tip
Instead of discarding older bread, turn it into crispy croutons. Not only does this minimize waste, but it also adds texture to your soup. In fact, children often call them “chips” because of their satisfying crunch!
